A concentrated, lyophilised Geotrichum candidum starter culture for direct milk inoculation (DVI).

Starter in the form of a powder (lyophilisate). Screw-on packaging allows repeated pouring of the required dose, screwing and storing in the freezer. Starter culture resistant to higher temperatures during transport.

Application: cheeses with white mold growth, e.g. Camembert, Brie, etc.

This culture should be used in conjunction with bacterial cultures, especially with the MST culture.

Storage: -18º+5ºС.

Before use: take the culture from the freezer and place it in a fridge (+5C) for at least 2 hours before use (or store cultures in a coolest place in a fridge). Use a sanitizing agent to sanitize both the upper side of the packet and the tool used to open it. Sanitize your hands as well.

Direct inoculation: Pour the culture directly into the milk, without initial activation. Mix thoroughly.

Nebulization (spraying): Dissolve the dose per 100 liters of milk in 0.5 L of boiled water and cooled to 20°C (or proportionally larger / smaller amounts). Dry the cheese surface and spray according to the recipe we use to make the cheese.
